Shrimp Scampi & Buttermilk Pie {Giveaway is Closed}

When Simple Suppers first arrived on my doorstep, I did what I usually do when I get my hands on a new cookbook. I do a quick glance and flip through the pages. So this time was no different. I was thumbing through Jennifer's book and I instantly stopped on a recipe for Corn Chowder and then again on her Shrimp Scampi recipe.

The photo's alone looked divine, I immediately knew this was a cookbook that I was going to love. The title says it all Simply Suppers "Easy Comfort Food your Whole Family will Love". Simply Suppers is a follow up book from Simply Salads. Which I do not have, but since reading simply dinners I will be looking into that book next.

The second thing I look at in a cookbook is the photos. Most people at first glance eat with their eyes. So food has to look yummy and inviting. The photos in Simply Suppers are bright, colorful and seem to jump right off the page. Jennifer's recipes are all about Comfort Food, you know all those recipe that remind you home and warm you from the inside out.

Well let's be honest some people don't have a whole lot of time to cook a homemade meal from scratch. So instead you turn to convenience foods or take out. Well with Simply Suppers it's just that simple homemade meals you can get to the table in no time. Jennifer's book has meals for everyone. 30 in about 30 centers around meals that can made in 30 minutes.

There's also a section for meals to make with leftover chicken. White Bean Chicken Chili, Chicken Pot Pie, and Corn Chowder which I just so happen to have on my November Dinner Menu. There is even Freezer Go to Meals. So you see even if you are in a pinched for time you can still enjoy a home cooked meal.

I was excited to get started and pick out a few recipes to try. My first choice of course had to be Jennifer's Shrimp Scampi on page 89. I can eat shrimp scampi until I burst at the seams.

All that butter, garlic and lemony goodness. This recipe was straight forward and easy to follow. There is even cooking tips or variations for each recipe.

In this case Jennifer mentions that you can also substitute scallops in this recipe. I love scallops and without that little tip I would of never known to do that.


Shrimp Scampi

Ingredients:
2 - lbs - large uncooked shrimp (16-20 ct) peeled & de veined
kosher salt & peppers
2 - tablespoons olive oil
10 - tablespoons unsalted butter, divided
3 - cloves garlic, minced
1/4 - cup dry white wine
1 - tablespoon fresh lemon juice
2 - tablespoons parsley, chopped

Directions:
Season shrimp with salt and pepper and set aside. In a large saucepan over med-high heat warm the oil until you hear a sizzle when you add a drop of water to the pan. 

Add the shrimp and saute turning occasionally until cook through (about 4 minutes). Transfer the shrimp to a plate and cover to keep warm.

Reduce heat to med-low. Melt 1 tablespoon butter in the same pan you used to cook the shrimp. Add garlic and saute until softened, but not browned (about 2 minutes). 

Add the wine and lemon juice. Raise the heat to high and bring the mixture to a boil. Reduce heat to medium and simmer until the sauce is reduced by half, about 2 minutes.

Reduce the heat to low and whisk in the remaining butter, one tablespoon at a time. Return the shrimp to the sauce and toss gently to coat. Season with salt and pepper to taste. Garnish with parsley. Serve hot or over cooked pasta.


Lets move onto desserts page 207 is for Buttermilk Pie. Um that is one of my favorite pies so that was first on my desserts to try list. This pie is slap you silly easy and is pretty much a no fail recipe. A good buttermilk pie should be firm on the inside and brown and crispy on the top. Well as you can see by the photo above my buttermilk pie was just that.


Jennifer's Buttermilk Pie

Ingredients:
1 - 9 inch pie crust (store bought or homemade)
1 1/2 - cups sugar
3 - tablespoons flour
1 - cup well shaken buttermilk
1 - tablespoon fresh squeezed lemon juice
2 - tablespoons vanilla extract
2 - large eggs
1/2 cup (1 stick) unsalted butter, melted & cooled to room temperature

Directions:
reheat the oven to 415 degrees. Place the pie crust in a deep dish pie pan and flute the edges. 

If desired use store bought pie crust. Set aside. In a large mixing bowl whisk together the sugar, flour, buttermilk, lemon juice, vanilla., eggs and melted butter. 

Bake the pie crust for 5 minutes or until golden brown.

Remove the pie crust from the oven and pour the filling into the warm crust. Return the pie to the oven and bake until warmed, about 10 minutes. 

Then without opening the door , reduce the heat to 350 degrees and bake until set, about 40 minutes. If the crust begin to brown to quickly add foil around the crust edges. 

Remove from oven and place on a wire rack to cool completely. Serve at room temperature.

Servings: 8

Homemade Potato Soup!!! My whole family thinks of this as a comfort food and a "tradition food". As soon as it starts getting really cold and grey out - it's time for Potato Soup. And, Christmas Eve supper is Potato Soup. I first got hooked on Potato Soup when my Granny (who turns 102 in December) and Papa owned a tavern (not a bar back then) and Gran made the best Potato Soup around! Yummo! HUGS... and stitches

Hi Tina,

I would have to say either my Mom's pulled pork sandwichs or chicken and dumplings. I'm not quite sure what her recipes are as she will always tell me "you'll get my recipes when I'm dead". Now that's not to say that's what I'm wishing for but I certainly wish she would make them more often than she does. The best part is that they are both one pot meals that everyone from my kids to my picky brother and sister-in-law. Now that's good homecooked food!

My comfort food is max and cheese.. I Love Mac and cheese that is baked in the oven and l love eating it any time... I will get a big bowl of it while I am watching tV... It reminds me of home with my Grandmother. OOO how I miss them times years ago.

My favorite would have to be ...chicken spaghetti...with fresh yeast rolls....there's another 3 pounds on my hips just thinking about it.

I use a recipe I got off Pioneer Woman's blog...and if I remember correctly I think I've seen it on your blog too....it's just a perfect dish all the way around.

That cookbook sounds like a great one...and I'd love to try that Bananna Pudding Pie...sounds delicious!

Tina, I do not have a blog. So I am sending my comment about the cookbook. I love shrimp scampi, the dish looks so good. I consider my comfort food macaroni & cheese. I really enjoy your postings. I look forward to looking every Sunday to see what you have posted.I tried the brownies with marshmallow creme and frosting and have since made it several times.

My favorite comfort food is homemade chicken soup. I make it in the winter time and freeze it for my kids so it is ready whenever someone in the house gets sick. I always make a big pot of stock with the leftover turkey frame after Thanksgiving and make up a lot of soup with it!! Voila--Mama's Medicine for whatever ails you....

my favorite comfort food is home made soup. I make a large pot to potatoe soup or if I am in a hurry, I make tomatoe soup. a few saltine crackers along side and I am good to go. MaryAnn
