Freezer meals have saved me a time or two in the past, so I am always thankful that I have them on hand.
This recipe for Crock Pot Apple Pumpkin Cake immediately caught my eye! My family loves anything that involves pumpkin, so I was excited to make this cake. I just recently started making dessert in my crock pot and let me tell you it makes things so much easier, and they taste really good. I don't know why I waited so long.
I was a bit skeptical if the cake would bake, but as you can see from the photo it baked up beautifully. Add a dollop of whipping cream and you have a quick easy dessert. I will definitely be making this cake again when fall arrives.
Crock Pot Apple Pumpkin Cake
{Chapter 1 - 6 hours}
1/2 - cup butter, softened
1 1/2 - cups packed brown sugar
1 - cup pumpkin puree or canned pumpkin
3 - eggs

2 - teaspoons baking powder
1/4 - teaspoon baking soda
1/4 - teaspoon salt
1 - teaspoon cinnamon
1/4 - teaspoon nutmeg
1 - 21 oz can apple pie filling
whipped topping for garnish
In a large bowl using an electric mixer beat the butter and brown sugar until mixed. Beat in the pumpkin and eggs until blended. In a separate bowl sift together the flour, baking powder, baking soda, cinnamon and salt. Slowly add the flour mixture into the butter mixture. Beat for 2 minutes.
Spoon the pie filling into a 6 quart slow cooker that has been sprayed with baking spray. Pour cake batter over pie filling. Cover and cook on high for 1 1/2 - 2 hours or until a toothpick inserted comes out clean. Garnish with a dollop of whipped cream. Servings: 8
