
Drying (dehydrating) food is one of the oldest and easiest methods of food preservation. Dehydration is the process of removing water or moisture from a food product. By removing moisture from foods it makes them smaller and lighter. Dried foods are tasty, nutritious, lightweight, and easy to carry. Depending on the food, you can use a dehydrator, oven, solar, or air drying method.

AIR DRYING: is my new favorite way to dry herbs, using a mesh drying rack. This method retains the color of the herbs versus oven drying.
