Blistered green beans are a simple and flavorful side dish that can be whipped up in just 20 minutes using pantry-friendly, green beans.
When it comes to vegetables in our house we prefer fresh, especially when they come from our garden. If fresh isn't available than frozen is the next best thing. We don't eat a lot of canned vegetabes, but my family does like home-canned green beans. I love them because having jars of green beans on my pantry shelf means quick, ready-to-eat sides are just a reach away.
Currently our summer garden is overflowing with beautiful green beans. We typically grown a large crop to ensure that we have enough for fresh meals, and plenty to preserve to enjoy throughout the year. Green beans are a staple in the South and often times they are paired together with bacon to make various different reicpes, and today I am going to show you how to make one of our favorite recipes for Blistered Green Beans.
Blistered green beans is a simple side dish that is easy to prepare; it involves quickly cooking green beans in a hot skillet just until they blister and caramelize. You can choose to make them with or without bacon and onions, and they taste delicous either way. Personally, I love adding both for extra flavor. If you're looking for more of a kid-friendly version, simply skip the bacon and onions, and use bacon grease or butter to saute the beans instead. On this ocassion I opted for just the bacon.
Add the sliced onions (if using) and saute until they are soft and light golden in color. Add the green beans, and the canning liqued to the skillet. Cook on medium-high until the liquid starts to boil off.
Once the liquid evaporates, the beans will begin to sizzle. Let hte beans sit, undisturbed in the skillet for about 5 minutes before stirring. The beans will start to blister and become lightly brown. That's what you want. Keep stirring the beans ocassionaly until they are carmalized to your liking. Add the seasonings and the dash of sugar at the end ot avoid burning.
