Patriotic Sandwich Cookies + {More Patriotic Treats}

I can't believe today is July 1st! Three weeks of summer break and the whole month of June went by in a flash. July 4th is just around the corner, so I wanted to share a easy last minute red, white and blue treat with you. 

I always try and make something fun for the kids when the holidays roll around, and these Red, White & Blue Patriotic Sandwich Cookies are always a hit. I love easy recipes that involve a cake mix, so you guessed it the cookie part is made with a cake mix.

You can use a white cake mix or a patriotic themed mix to make the cookies. The best part is you can enjoy these cookies plain as cake mix cookie or with a added vanilla cream filling for sandwich cookies. By far our favorite version is with the creamy vanilla filling.

These patriotic sandwich cookies were inspired by my favorite Homemade Oreo Cookies, but with a holiday spin on them. My favorite part is how I can interchange the sprinkles and filling to fit just about any holiday. 



Patriotic Sandwich Cookies

1 - 16 or 18.25 oz package white or patriotic cake mix
1 - large egg
1/4 - cup water
1/4 - coconut oil or vegetable oil
patriotic colored sprinkles

Combine all ingredients in a large bowl and mix until blended. Drop by teaspoon 1-2 inches apart on a greased cookie sheet or roll into 1 inch balls. 

Using a glass press down on each cookie to flatten them a bit. Bake at 350°F for 12-15 minutes of until done.

Remove from oven and let cookies sit on baking sheet for 5 minutes before removing. Remove to a cooling rack and cool cookies completely before filling with vanilla cream.

Vanilla Cream Filling:
 


1/4 - cup room-temperature, unsalted butter
1/4 - cup vegetable shortening
2 1/2 - cups sifted confectioners’ sugar (powdered sugar)
2 - teaspoons vanilla extract


Cream butter and shortening together. Add vanilla extract and confectioner's sugar slowly until you reach your desired consistency.

To assemble the cookies, in a pastry bag with a 1/2 inch, round tip (you can always use a zip lock bag with a round tip or just use a butter knife) add about a tablespoon of filling into the center of one cookie.

Place another cookie similar in size on top of the filling. Lightly press, to work the filling evenly to the outsides of the cookie. 

Continue this process until all the cookies have been sandwiched with cream filling.

Recipe yields: 12 sandwich cookies
