Mom's Old Fashioned Marble Bundt Cake

A simple, homemade buttery, chocolate - vanilla bundt cake that is swirled together to make a marble design.
Growing up, this is was the cake my mom always baked. A simple, moist, no frills chocolate and vanilla swirled Bundt Cake sprinkled with powdered sugar. My Mom's Marble Cake was a staple in our home and always a family favorite. This cake is not really sweet or gooey like most cakes, but more of a chocolate and vanilla swirled pound cake.  The only time I really enjoyed a cake with frosting was on special occasions or Birthdays.

As a kid, I preferred just the vanilla part of the cake, because the chocolate swirl was more of a bittersweet chocolate. As I got older I learned to appreciate both parts of this delicious marble cake. Most folks will find this cake a bit dense and not sweet at all, but that's just the consistency of this German style cake.  Traditionally, this cake is enjoyed with a cup of coffee or a large glass of milk.

Mom always used milk in her marble cake batter, but I like to use buttermilk instead. Buttermilk adds a rich flavor and moistness to this cake that regular milk does not. Marbling the cake batter is simple. Just spoon the vanilla and chocolate batter into the Bundt pan and swirl the flavors together with a knife to create a marble effect. Mom always topped her marble cake with a sprinkle of powdered sugar, but I like to add the fudge icing on special occasions. Either way you can't go wrong. I hope you'll give this cake a try and let me know what you think.   

Before I go can we talk about this gorgeous vintage style cake carrier? Isn't it sooooo darn cute! I stumbled across it a year or so ago at my local Tractor Supply and I had to buy it. I was so excited when I saw it and it was on sale!!!! I don't know about you, but this cake carrier just makes this cake that much better. What a treasure of a find and it's red which is the color of my kitchen! ❤ 

Let's get started and I will show you how to make my Moms Old Fashioned Marble Cake!
 
Start by preheating the oven to 350 degrees. Grease and flour a 8 - 10 cup capacity Bundt or tube pan and set aside.  I like to use Bakers Joy Pan Spray with flour which is a non stick pan release spray with added flour. It's never lets me down. 

In a large mixing bowl, separate the eggs and beat the eggs whites using an electric mixer on high until stiff: set aside. In a separate bowl on med-high speed, cream the butter and 1 1/2 cup of sugar until creamy. Add the egg yolks and vanilla, mix to combine. Add the flour alternately with the buttermilk and mix on low speed. 

Gently fold in the egg whites. The mixture will be somewhat thick.  

Remove 1/3 of the batter and place in a small mixing bowl.  Add baking cocoa and 1/4 cup sugar, mix to combine using a spatula. 

Add the yellow cake batter to prepared Bundt or tube pan. 

Spoon the chocolate mixture on top of the yellow cake batter. 

Lightly swirl the batter using a knife to create a marble look.  


Bake the cake for 45 - 50 minutes or until the cake tests done using a toothpick. Remove from oven and allow to cool in pan for 15 minutes before inverting onto a cooling rack and removing from pan.  

When cake cools sprinkle powdered sugar or top with a chocolate fudge icing  (recipe below).

Ingredients

  • 2 1/2  cups self rising flour, sifted
  • 2 sticks butter, softened
  • 1 1/2- cups sugar + 1/3 cup sugar, separated
  • 4 eggs, separated
  • 2 teaspoons vanilla extract
  • 1 1/4 cups buttermilk
  • 3 tablespoon unsweetened cocoa powder (baking cocoa)
  • 1/4 cup powdered sugar to garnish top of cake or use chocolate fudge Icing
Chocolate Fudge Icing
  • 1 1/2  cups powdered sugar 
  • 3 tablespoons unsweetened baking cocoa
  • 3 tablespoons milk
  • 1/2  teaspoon vanilla extract

Instructions

  6. Add the yellow cake batter to prepared Bundt or tube pan. Spoon the chocolate mixture on top of the yellow cake batter. Lightly swirl the batter using a butter knife to create a marble look.
  7. Bake cake for 45 - 50 minutes or until the cake tests done. Remove from oven and allow to cool in pan for 15 minutes before inverting onto a cooling rack and removing from pan.
  8. When cake cools sprinkle powdered sugar on top or top with a chocolate fudge icing (recipe below). Both versions are equally delicious.
  9. To make the Chocolate Fudge Icing: Sift the powdered sugar and cocoa together. Whisk in the milk one tablespoon at a time. You want a semi thick, but pourable consistency. Pour along the top of the cooled cake and let the icing run down the sides.

    Gosh, it has been years since I have made a Marble cake.
    Seeing how delicious your cake looks makes me wanting to dig out my recipe and do a little baking today.

    I have been baking like crazy for Christmas, but really want to make this cake again. My mom passed away in 2012 and I find myself making more and more of her recipes.     so my mom had this recipe and she told me that it was her own recipe that she invented, but then I saw that her recipe and this recipe were the EXACT SAME!

    I have enjoyed this recipe for over 50 years. My mom learned to make while living in Germany. Mom only used milk in her recipe, but I use buttermilk for added moistness.
