Turkey Salad {Leftover Turkey Recipe}


Every year we have Thanksgiving with our family. Besides the meal itself my favorite part of Thanksgiving is always the leftovers. This year mom cooked a ham, so there were no turkey leftovers in site. That's always a little disappointing for me.

I like to have turkey on Thanksgiving and Ham at Christmas. Thanksgiving just isn't the same without that beautiful bird gracing the table. I always take advantage of the sales and buy a turkey even if we go elsewhere for the holiday. I can't help it! I look forward to all the leftover turkey to use in sandwiches, soups and casseroles.

If I'm lucky enough I usually buy two since we have a large freezer. Nothing like roasting up a turkey in the middle of the year. I'm sure by now everyone has used up all their leftover turkey. I just finished off the last of ours to make this yummy Turkey Salad for sandwiches.


This is one of my favorite salads to make with turkey leftovers. The toasted pecans and celery give it a nice crunch. The pickle relish and red grapes add a touch of sweetness and color. I've also used chopped apples in place of grapes, but grapes are my favorite to use in this salad.

I know Thanksgiving is over, but since we were  a bit late I still wanted to get this recipe posted. I hope you enjoy it.



Turkey Salad Sandwiches

4 - cups cooked, diced turkey
2 - stalk celery, diced
1 - cup red seedless grapes, sliced
2/3 - cup toasted pecan pieces
1 - tablespoon pickle relish, optional
3/4 - 1 - cup mayonnaise
1/2 - teaspoon lemon juice
salt and pepper to taste

In a small dry skillet add the pecans over medium heat and toss until they're toasted, about 3-5 minutes.

Let pecans cool and then break into pieces. You can also do this in the microwave on high for one minute (watch carefully). 

Dice the celery and slice the grapes. Combine the turkey, celery, grapes, pecans and pickle relish to a large bowl. Tossing to combine.

Add the lemon juice to 3/4 cup of mayonnaise and mix. Pour over the turkey mixture.

Add salt and pepper to taste and lightly mix until everything is blended. Add more mayonnaise if needed.

Serve on fresh bread, croissants or crackers.

YUM! We don't have any leftover turkey, but this recipe makes me want to go buy one! I love turkey sandwiches, but I don't think I've ever made it into turkey salad!

I have another turkey in our freezer. I think after the new year I will cook another one.
Don't know why I didn't think of turning my chicken salad recipe into turkey salad... This looks delicious. I'm going to have to buy a turkey breast at the store just so I can make it!
