of the Technique Teflon Light Weight Cast Iron Skillet Set."
Did you know that May is National Egg Month? We eat a lot of eggs in our house, so I thought I would share a recipe for a Ham & Cheese Oven Omelet that I've been wanting to make for quite sometime.
Last week I had the opportunity to try out the new Technique Teflon Light Weight Cast Iron Skillet Set. If you know me than you know I have a love for cast iron skillets like no other. When I was contacted about reviewing the skillet line I was quite excited.
This was the very first Teflon® nonstick coating system designed for cast iron. Finally someone made a light weight non - stick cast iron skillet. I thought the oven omelet would be the perfect recipe to try out in the large skillet.
Don't get me wrong I still love my old fashioned cast iron skillets, but sometimes I need a good skillet that offers a true non stick surface. Especially one that is oven safe just like my original cast iron skillets.
Here is a little information about the new cast iron skillet set. The Technique® Light Weight Cast Iron comes in a 2 piece set and comes in 3 different colors (blue, black and red). Each pan is coated with DuPont™ Teflon® Scratchguard Ultra, so it is safe to use with metal utensils (this was my favorite part).
• No need to use butter or oil
• Even and energy efficient heating
• Easy clean up
• It’s available in three colors (blue, black and red).
• Includes 10-1/2″ fry pan and 8″ fry pan
• Made without PFOA
• The first DuPont 4-coat nonstick Teflon system designed solely for cast iron
• It is safe to use with metal utensils.
• Technique cast iron pan is at least 40% lighter than traditional cast iron pans
• Stainless steel riveted handles
• Porcelain enamel exterior
• Dishwasher-safe; oven-safe to 500F
• Lifetime Limited Manufacturer’s Warranty

I was excited to get started so I could find out if the new cast iron skillets really were non stick. I had to read through the specifications a couple times, because I couldn't believe that these beautiful skillets really were oven safe, but they were. This was the perfect skillet to try out my new egg recipe.
The ingredients you will need:
8 eggs, 1 - cup milk, 1 - cup cheddar cheese, 1/2 cup cooked ham, green onions (optional)and salt & pepper.
When I was using these new pans I was really impressed with how smooth and non stick the Teflon coating was. There was no need for any butter or oil while cooking. I did use a smidgen of butter for flavor before adding the egg mixture, but that was it.
Like I mentioned above I was really nervous about placing the skillet in the oven, but I did it. The whole time the omelet was baking I kept thinking that something was going to go wrong, but nothing happened.
When the omelet was done baking it slid right out of the pan. There was no egg residue left at all. All the pan needed was a little soap and water and that was it. I could actually just dry out the skillet and store it back in the cabinet.
I can't do that with my regular cast iron skillets. They need to be cleaned and re seasoned with each use. Don't forget these skillets are also dishwasher safe. I have to say I'm very impressed with Teflons new cast iron skillet/fry pan set. Most of all Im even more impressed with their price ($39.84) for the set.
If you're looking to purchase a new skillet set I highly recommend the Technique Cast iron set. From what I can tell you can only get them on the QVC channel at this time, but hopefully they will be available in stores soon.
Would you like to try out these beautiful skillets? Well you can, because one lucky reader of Mommy's Kitchen will win a 2 piece set of DuPont Teflon Technique Light Weight Cast Iron Skillet Set. Just follow the rules below for your chance to win.

Actually an omelet sounds pretty yummy right now!
I would make yummy chicken and cheese quesadillas with ortega chilies! MMMMMM good.
I've been wanting to try your chocolate chip cookie skillet recipe but have been avoiding it because I hate cleaning and seasoning the cast iron skillet!!

I cook everything in cast Iron. Especially breakfast. Bacon, sausage, gravy. I will also use them for roast, fried cornbread, fried green onions.
I would love to make some buscuits or maybe an upside down pineapple cake. I def have had no luck with skillets:/ I am a fan and just became a fan of Teflon :)
These look great! I can not lift the cast iron, so this just may solve my problem! Nothing like baking a pineapple upside cake in this type of pan?

I would use it to make the omelet for my DH and sons. They would love it!
I also liked Teflon on Facebook!
I would make my yummy Pineapple Upside Down cake! I love to make it and I use my cast iron fry pan but it is sooo heavy and I have had carpel tunnel surgery and my wrists are no longer as strong so a lightweight version of the cast iron fry pan (and non-stick at that) sounds great! ;)

What wouldn't I make? Most likely start w/ scalloped potatoes.

I seriously love your e-mails...and such wonderful recipes!! I am sort of a recipe junkie...I eat, live and breathe for finding new and exciting recipes! I have a flat-top stove, and hubby said I couldn't use cast iron skillets on it, more often than not, I come upon a recipe that suggests using a cast iron skillet in the recipe...DARN! I would love to use the bigger skillet and try the ham and cheese oven omelet that you posted...would simply love it!!I am so excited! Thank you for your wonderful recipes and ideas, AND for sending them all to me! Thank you! Julie

Once I deliver this baby, I can't wait for a nice fried egg over easy. I think this skillet would cook one of those eggs to yummy, runny yolk deliciousness!!
I would make Salisbury Steaks with Crunchy Onion Mushroom Gravy. Love this skillet!
OHMYWORD! What a brilliant idea! I don't have any cast iron cause they're just so heavy. I would have to make a puff pancake in the oven. Very nice giveaway! =)

I would make sausage gravy to put over homemade biscuits.
I found a recipe for an upside down apple cake in a Southern Living magazine. I have been wanting to make it but the recipe calls for a cast-iron pan which I do not have (the entire article featured recipes made in cast-iron pans). It would be wonderful to win these pans so I can make this recipe and many more.

I would certainly try your omelet that you have posted, sounds delicious. I am an old timer when it comes to using cast iron, I have used it for many years, it makes things so much better. Either I am getting older and weaker or else the pan is getting heavier with age. HA!
