Old Fashioned Oatmeal Cake with Broiled Coconut Frosting

A vintage oatmeal spice cake with an old fashioned broiled crunchy coconut-pecan topping.
Good morning everyone. I just wanted to let y'all know that today I'm doing a Guest Post over at The Country Cook. Brandie is one of my blogging bff's and close friend, so I'm tickled to be contributing a guest post. You know me, I love a good cake recipe. This delicious oatmeal cake reminds me a bit of a German Chocolate Cake. The cake part is made with oatmeal, but the frosting is a cooked coconut-pecan frosting.

After the frosting is cooked it's finished off by placing the baked cake under your ovens broiler. The broiler makes a crispy golden brown topping.  This would be a wonderful dessert to make for Mothers Day which is just few short weeks away. Lets get started on this easy Oatmeal Cake.

I have included some step by step photos of the cake and broiled frosting preparation. 

Yum! There is just something so special and delicious when it comes to a good homemade broiled pecan frosting.

I made a different oatmeal cake recipe for a family reunion, one that didn't call for cooking the frosting before broiling. However, my butter was cold and wasn't mixing in properly, so I sat it on the burner to warm a bit. And promptly forgot about it! It simmered for a few minutes but luckily didn't burn, so I breathed a sigh of relief and continued. It was the best mistake and best cake EVER!! Can't wait to try this one!

The cake part of the recipe calls for 1 - 1/2 cup (1 stick) butter,
So how much butter are you supposed to use?

My Mom always made this delicious Oatmeal Cake w/frosting but never did get her recipe. I am so happy to find it here and it does look delicious & moist. I can't wait to make it.

Can i replace the coconut with something else. My hubby doesn't eat coconut , but this recipe sounds so delicious.

This is an old fashioned recipe, so I have no idea what you could replace the coconut with and have the cake still taste the same. Maybe a reader can chime in and suggest something.

I also need to know about the coconut, my husband (who would eat most of the cake lol) doesn't like coconut. :( I love this cake as is! Wondering if I can just leave it out or double the nuts? Hopefully someone has tried something! :) Because this cake is fabulous!!! Maybe just 'ice' it like a regular cake?

CAN YOU SAFELY PUT A PYREX 13X9 PAN UNDER A BROILER WITHOUT IT BREAKING?
I HAD NOTICED THAT SEVERAL PEOPLE ASKED WHAT THEY COULD SUBSTITUTE FOR THE COCONUT. CHOPPED DATES WORK WELL WITH THIS ICING RECIPE HOWEVER IT WILL MAKE THE CAKE RICHER AND SWEETER.

You are only placing the glass pan under the broiler for 2 minutes, so yes you can place a glass pan under the broiler. I place the pan on the bottom rack not directly under the coils. The frosting is a coconut-pecan frosting, so I really cannot think of a good substitute without changing the flavor and texture of the frosting.
