I place the pan on the bottom rack not directly under the coils. The frosting is a coconut-pecan frosting, so I really cannot think of a good substitute without changing the flavor and texture of the frosting. However, my butter was cold and wasn't mixing in properly, so I sat it on the burner to warm a bit. And promptly forgot about it! It simmered for a few minutes but luckily didn't burn, so I breathed a sigh of relief and continued. It was the best mistake and best cake EVER!!
