Crock Pot Vegetable Beef Soup

Earlier in the week we got our very first cold snap of the season. Finally us Texans get a bit of the cold winter weather. We got down to the 30's so it was definitely soup weather. There is nothing more comforting on a cold winter day than a hot bowl of homemade soup and bread. My kids are not crazy about soup unless its tomato or chicken noodle, but my husband and I love it. 

This recipe is very versatile you can use beef or ground beef its really up to you. The veggies can be anything you have on hand, it is vegetable soup. I served this soup with a fresh loaf of Homemade Beer Bread. I have also posted that the recipe for that. Isn't it about time you enjoy a good bowl of homemade soup. 


Vegetable Beef Soup

1 1/2 - 2 lbs stew meat, chuck eye, or hamburger
salt and pepper to taste
oregano
basil
1 Bay Leaf
1 tsp Paula Deens house seasoning
1/8 t seasoning salt/Lawry's
1 pkg dry onion soup mix
4 - 5 Cups hot water
1 - 14 oz can beef broth
1 8 oz can tomato sauce
1 Tablespoon Worcestershire Sauce , Country Bobs sauce or Kitchen Boutique
2-3 celery sticks chopped
1 cup carrots, sliced
1 - 16oz Bag Frozen Mixed Vegetables
1 - 15 oz can diced tomatoes
4-5 Potatoes Diced

Brown meat in a bit of oil if using beef then drain. If you are using hamburger just brown and drain the meat. add to the crock pot. Then add water, tomatoes, broth, spices, onion soup and sauces. I let the meat cook for about 2 hours then add all the vegetables and cook on low for about 6 hours. Remove bay leaf and serve. Garnish with Parmesan cheese if you wish.

Tina, I wanted you to know I tried the banana recipe you posted using a cake mix...It was the absolute best bread I have ever made. Thanks for sharing. It's been awhile since I have posted a recipe. I have been so busy visiting the twins. You should check out my blog for an update.

this looks so yummy, especially on those cold days. 30 sounds warm tonight. right now it is around 0 degrees!

Oh I remember those cold days here in Houston. I even got a cold from it and still trying to get over it! This stew would have been the answer but I was so sick, I had no energy to cook. I will try it another time though. Looks really good.
