Slow Cooker Ham Bone Soup

This homemade ham bone soup makes perfect use of a leftover ham bone, and it's easy to make in a slow cooker. 
If you're lucky enough to have a leftover ham bone consider yourself blessed, because you can transform every bit of that into this hearty and delicious soup. Normally, when I have leftover ham, I make ham fried rice or instant pot pinto beans and ham, but this slow-cooked ham bone soup is my new favorite recipe to use leftover ham.  

Ham bone soup is loaded with the standard soup base of onions, celery and carrots, but it also contains other vegetables such as potatoes, corn and pinto beans, slow cooked together in a rich ham broth. This soup is classic comfort food and perfect for those chilly fall and winter nights, but if I'm being honest, I have made this soup in the heat of summer because it's that good. 

This easy slow cooker soup calls for canned beans, and has a smoky - rich broth. Ham bone soup is a delicious meal-in-one. Serve with a homemade crusty bread, skillet of cornbread or with beer bread for an easy, satisfying dinner. I have included the full recipe in the recipe card at the end of this post, but below is a quick version of the recipe. 

Place the ham bone in the slow cooker. Add the chopped onions to a small skillet and saute for about 3-5 minutes. Add the garlic and continue sauteing until the onions become translucent in color. Add the onion mixture into the slow cooker.

Add the remainder of the vegetables, seasoning, water, bay leaf and one packet of Goya's ham flavored concentrate packet.    

Mix everything together until combined. 

Cover and cook on low for 6 hours. Remove the ham bone and pull off the ham. Dice up the ham and return it to the slow cooker, and continue cooking the soup on low for an additional hour. 

Season to taste and serve.
