A simple recipe for country-style summer squash and onions, pan fried with bacon grease, butter, and seasonings.
Who loves summer squash? ✋ Summer squash is one of the most abundant vegetables that you can plant in your garden. As soon as summer squash starts coming in, you will find yourself with more squash than you know what to do with. I don't mind though, because yellow and zucchini squash is a versatile vegetable, and really simple to cook. I like to grill it, fry it, pickle it, and bake it, but my favorite way to cook summer squash is sautéed or stewed with onions.
For me, this recipe is simple, comforting and reminds me of my childhood. No matter how old I get, there are some things that never change, and one of them is my love for certain foods that I enjoyed growing up. Stewed okra and tomatoes, cauliflower with a homemade hollandaise sauce, and stewed squash were some of my favorite side dishes that my mom made.
Sautéed squash is a simple recipe for country-style summer squash, smothered in sweet onions, bacon grease, butter, and salt and pepper. I like to use straight-neck squash, but crook-neck squash works just as well. Sometimes I use a mix of zucchini and yellow squash, but normally, I just use whatever I have on hand from our garden or freezer. When choosing squash for this recipe, look for younger squash because the squash is denser, sweeter, and has fewer seeds.
If you let summer squash grow too big, the skin gets tough, has larger seeds, and the squash becomes bitter and mushy. So always keep an eye on the squash in your garden, because they can get out of hand quickly. But if you do end up with too much squash to deal with, this is the perfect recipe, so I hope you'll give it a try. 🌿 These are the Ingredients you'll need:
- Summer Squash: Yellow squash, or a mixture of yellow and zucchini squash will work too.
- Onions: Vidalia onions are my favorite, but any yellow or white onion will work.
- Bacon Grease: adds a smokiness to the dish. If you don't have a jar of bacon grease in your fridge just add an extra tablespoon of butter.
- Butter: adds a richness to the squash.
- Seasonings: salt and pepper, or McCormick's garlic, onion and black pepper seasoning. Salt and pepper is enough for this recipe, but I use the McCormick seasoning on just about everything.
Melt butter and bacon grease in a large skillet over medium heat.
Add sliced squash and sliced onions to the skillet and sprinkle seasonings over the top. Give the mixture a good stir to combine.
Sauté over medium-low heat for 5 -8 minutes, stirring occasionally. You want it to get a bit brown in color.
Cover with a lid or large plate and let the mixture simmer and cook for about 10 minutes or until vegetables are tender, stirring occasionally.
Add additional seasoning if desired before serving. Serve warm.
