Bush's Mexican Bean Pizza

When I think of Mexican Pizza I immediately think of the Mexican Pizza's from Taco Bell. Anytime we do a Taco Bell run I always look forward to ordering their Meximelts and their Mexican Pizza. By far two of my favorite Taco Bell Items.

Since we moved Taco Bell is a bit further out so we don't get to enjoy it quite as much. The other night I wanted a quick dinner, so I decided to try a Mexican Bean Pizza
I saw on the Bush's Beans website.

These yummy Mexican pizza's pictured above are topped with beans, beef and all the delicious taco toppings of your choice. They can be cut into wedges and served as an appetizer or left whole and eat as as meal. We chose to keep ours whole and stack 3 corn tortillas on top of each other.

Canned beans, especially Bush's are a staple in our house. I love canned beans, because they're perfect for just about any appetizer, salad or meal. I try to keep plenty of cans on hand for quick meals and salads. Not only are beans delicious, but they're also a great source of protein.

Pinto and Traditional Re fried Beans are my bean of choice, so that's what I used for this recipe. If you get caught without canned re fried beans don't worry, because you can easily make them yourself with regular pinto beans.

Just drain the beans and reserve a bit of the liquid. Mash the pinto beans with a fork, potato masher or a food processor adding any liquid as needed. That's it! Really it's that easy.

I served these yummy Bean Pizza's with a side of Spanish Rice. Everyone loved them, especially my oldest son who is hard to fill up these days. I think this recipe is pretty versatile, so you could use flour or corn tortillas.

Next time I'm going to use a combination of flour and corn tortillas. I will also bake the tortillas first then add the beef, bean and cheese to totally cut out the need for any frying. See note at the end of the recipe for baking directions.





Bush's Mexican Bean Pizza

Ingredients:
1 - 16 ounce can Bush's traditional re fried beans
1 - pound ground beef, browned
1 - 1.25 ounce package taco seasoning mix
1/4 - cup vegetable or canola oil
4 - 6 inch corn tortillas
8 - ounces shredded cheddar or mexican cheese blend
8 - tablespoons sour cream
2 - Roma (plum) tomatoes, chopped
2 - green onion, chopped
1 - 4 ounce can green chiles, diced
1/2 - avocado, diced
1 - tablespoon black olives, sliced, per pizza
shredded lettuce and salsa if desired

Directions:
Heat the re fried beans. In a large skillet, brown the ground beef. Stir in the seasoning packet.

Preheat oven to 350 degrees F (175 degrees C).

Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds.

Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a baking sheet.

Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
Bake the tortillas in the preheated oven for 20 to 30 minutes. (I baked mine for 15 min)

Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, lettuce, green chiles, avocado, and black olives.

Note: The tortillas can be baked instead of fried. Place the tortillas flat on a baking sheet. Bake for 10 - 12 minutes in a 375 degree oven. Spread a layer of beans and beef then top with cheese. Bake until the cheese is melted and beans and meat are heated through.

My family loves Mexican Pizza and we make ours very similar to this. They make a great kid friendly meal and are a fun way to change up your normal tacos or other mexican type food.
I absolutely love this and your blog!!! I can't wait to make this and include it on a regular basis instead of boring beef tacos. :-)

1 tablespoon of oil to fry 4 tortillas on both sides? Really?

I adjusted the oil amount for frying the tortillas. I think 1/4 cup is more along the lines to fry 4-6 tortillas. One tablespoon was recommened on the Bush's site, but I know I used more than that to fry the tortillas.
