Snicker Bar & Butterscotch Chocolate Chip Pudding Cookies

Today I am posting the Pudding Cookies that I had made last week. I mentioned on Face book that I was baking them so a few folks have asked about the recipe.
 

Well, I'm finally getting around to posting it. I originally found this recipe at Tanya's site the Sunday Baker.
 

Tanya is so sweet and she just so happens to be adding another handsome little boy to her family later this week.

Tanya you and your new little guy are in my thoughts and prayers. Babies there just so darn sweet. When I initially saw this cookie recipe one ingredient caught my eye.
 

It was instant vanilla pudding, I wasn't used to seeing that in a cookie recipe. So as usual curiosity got the best of me and I had to make them.

I used the same cookie fillers that Tanya used snicker bars and a mixture of butterscotch and chocolate chips.
 

 I always mention how much I love butterscotch chips so I knew they had to be good. You can really use any type of cookie fillers you want, just pick your favorites. I don't think you could go wrong with any of them.

I do know that you wont be disappointed in this recipe. Not only were they easy to make but, they were so good. My kiddos are my taste testers and they loved them.
 

I think the pudding mix is a nice a addition the cookies turned out so soft. This cookie recipe is definitely a keeper.

Here is Gracie aka slacker!!! Gracie started out helping so well until the cookie dough was all mixed up. Then she bailed on me and thought eating was much more fun. Oh well I guess you just cant find good help anymore, but definitely a girl after my own heart.



Preheat oven to 350 degrees. Stir together flour and baking soda in separate bowl and set aside; in a large bowl, cream butter, brown sugar


and white sugar.


Beat in pudding mix until well blended.

Stir in the eggs and vanilla. When smooth,


add in the flour mixture. This can take a little while, but make sure it's well incorporated into mix.


time to add the cookie fillers. I separated my cookie dough and added chopped up snickers bars to one part


And a combination of butterscotch and chocolate chips in the other


I use my cookie scoop or if you have a small melon ball scoop that works just as well. Make 1 " balls so the cookies are all uniform in size and bake evenly. When using the snickers, make sure you smooth the balls or the snickers part will ooze all over your pan.



Line your cookie sheets with parchment paper


and bake for 8-12 minutes or until golden.











Pudding Cookies

4 1/2 - cups all-purpose flour

2 - teaspoons baking soda
1-1/2 - cup butter (3 sticks) softened
1-1/2-  cups brown sugar, packed
1/2 cups white sugar
2 - (3.4 oz.) packages instant vanilla pudding
4 - eggs, room temp
2 - teaspoons vanilla extract
4 - cups of add-ins you want to use like chocolate/butterscotch/peanut butter/white chocolate chips, candy bars, m&m's, nuts, etc.


Preheat oven to 350 degrees. Stir together flour and baking soda in separate bowl and set aside; in a large bowl, cream butter, brown and white sugar. 

Beat in pudding mix until well blended. Stir in the eggs and vanilla. When smooth, slowly add in the flour mixture. 

This can take a little while, but make sure it's well incorporated into mix.

Finally, add the "fillers". This time I split the dough in half and used chopped up snickers bars in one: 

And a combination of butterscotch and chocolate chips in the other: I use my small melon ball scoop to make 1 " balls so the cookies are all uniform in size and bake evenly.

When using the snickers, make sure you smooth the balls or the snickers part will ooze all over your pan. 

Line your cookie sheets with parchment paper and bake for 8-12 minutes or until golden. Let cool completely and store in a air tight container.

I've been looking for a recipe to use my "odds and ends" in the pantry. You know- half a bag of this leftover from one recipe, half a bag of those left over from another. Can't wait to try these!

I make bar cookies that have pudding in them. We call them bugs bunny bars, and they really are the softest, most moist cookies I've ever had!
Ooh, we love a good soft cookie...the pudding mix sounds like the key! Can't wait to try these...thanks for sharing.
