Crock Pot talian Beef Sandwiches

This Italian beef is perfect for sandwiches and easy to make in a slow cooker.
I have been trying to go through some of my favorite cookbooks. Over the years, I have collected several actually too many to count. On top of my cookbooks, I have a stack of Cooking with Paula Deen, Rachel Ray, and Taste of Home Magazines, so I have plenty to go round. 
 
I don't know about you, but anytime, I thumb through a cookbook I always seem to find a recipe that I didn't see before. That is exactly what happened when I was going through my "Gooseberry Patch Christmas Pantry Cookbook". 

I came across this recipe for Italian Beef Sandwices, and I had all of the ingredients on hand. Plus it was a crock pot recipe, so you gotta love that. This recipe called for using a truck roast which is my favorite cut of meat when I cook a roast. 
 
The meat in this recipe turned out so tender and everyone enjoyed this meal. The original recipe stated to cook overnight with an addition 8 hours totallying up to 16 hours. I have found that this amount of time is not needed, and 8 hours is suffienent. If you're looking for a new crock pot meal then you really need to try this recipe.

Oh yum this looks so good. Im going to hunt around for a decent sized roast here and make it. I am forever looking at my Taste of Home magazines I brought with me overseas and I've just started buying the Gooseberry Patch cookbooks..arent they both great!

Just today I was looking through a 1999 Quick Cooking (by taste of home) and found 4 or 5 recipes I am planning to make. I must have over looked them. I also have a huge collection and love going back and looking through the old ones. I really like the Gooseberry Patch books too. I have a roast in the freezer than is just begging me to make them into some yummy Italian Beef Sandwiches!

Looks really yummy, but 16 hours cooking time, boy that's a long time. I wonder if you could just put everything in at once and cook for 8 hours?

Hi Sonya, I love taste of home. I cant even remember how long it has been since i got my first magazine. It was a long time ago though.

Heidi, quick cooking is great to. I think they changed the name now. All the old issues i have are quick cooking back in the late 90's early 2000. That is why i always go back and look through them because you always find something new.

Ann, I put a note at the bottom of the recipe for time adjustments. I did mine from start to finish in about 10 hours. I dont think it needs to cook the whole 16, but that is what the recipe stated so thats what i put. It really is a tasty recipe.
This looks so good! I'm going to have to try it soon. I love yummy sandiwhces like that. Yummy post! :)

I love your blog. I have been reading it for awhile now.

I tried this recipe last week. We loved it. I was alittle short on time so I cooked it for 4 hrs on High and then added the beef broth and then cooked it for another 4 hours on low. It turned out great.

I love this recipe - it is so yummy. PLUS, as hot as it is this summer I use my crockpot every chance I get. I added an extra bell pepper because the ones at the store were small, and my hubby and son love them so much. The best part is how delish the house smells.

I make this all the time but I use a 3-5 pound Rump roast, a large jar of Italian Peprachini Peppers and a package of Hidden Valley Ranch Dressing Mix, Put all in a crock pot and when it is done, shred the roast, place it on hoggie rolls with mozzarella cheese, place the top on and put the sandwich in foil and put in the oven for about 15 minutes on 350. These are absolutely wonderful.
