Holiday Eggnog Quick Bread, One of My Favorite Things.

I love it when i get the first glimpse of Eggnog on the grocery shelves. I feel like a kid in a candy store, you see when i see Eggnog I immediately think of my Holiday Eggnog Bread. I get so excited I usually end up buying a couple cartons, one to drink and one to bake with. I have been making this wonderful holiday bread for so long I cant even remember where I got the recipe. I think it was online somewhere.

The original version did not have the instant pudding in the recipe, but for some reason I thought the bread to be just a bit dry. I thought maybe if I added a packet of instant french vanilla pudding and increased the eggnog by a half a cup that might do the trick.

Well it did, and this year is the first year I drizzled a eggnog glaze on the bread, it really took a already great recipe over the top. I made mini loaves for gift giving, so the recipe yields 5 mini loaves or 1 large loaf. I can say today as i type that i am down to just three loaves i cant stop eating this stuff.

I managed to freeze the remaining three loaves so I cant get my hands on them. Now my kids seem to think they like it too ugh, guess I need to bake some more of those little guys. I think the bread is at it's best the second day after the flavors have mixed together. You cant even detect the instant pudding it really made the bread so moist.

I will continue to add the pudding and add the eggnog glaze it's so yummy!!! now go bake some of this bread you wont be sorry. I guarantee after you taste this bread you wont think of eggnog the same way again, you will be thinking about this awesome holiday recipe.


These are the ingredients you will need: Eggnog, eggs, sugar, all purpose flour, melted butter, instant vanilla pudding, vanilla extract, rum extract, nutmeg, salt and baking powder.


Beat eggs, add sugar, eggnog, butter, rum and vanilla extract.


Blend well with a mixer.

Sift together the flour, baking powder, salt and nutmeg. Add to the batter.



next add the dry instant vanilla pudding

Blend again until everything is combined. If the batter seems a little thick just add a bit more eggnog.



Grease bottom of bread pans I spray the sides as well.

Pour into greased mini loaf pans or two 9x5 inch loaf pans. Bake at 350 degrees for 45-50 minutes for regular loaf pan or about 20 - 25 minutes for mini loaves. bake until golden brown and toothpick inserted comes out clean.


cool in pans 10 minutes.


Remove and place bread on cooling rack until completely cooled. This bread makes the house smell so good.



Drizzle eggnog glaze on top and let the glaze dry.





Holiday Eggnog Bread

2 1/4 - cups all purpose flour
2 - teaspoon baking powder
1/4 - teaspoon salt
1 - 3.4 oz package instant french vanilla or vanilla pudding
1 1/4 - cups sugar
1 3/4- cups eggnog
2 - eggs, beaten
1/2 - cup butter, melted
1/4 - teaspoon nutmeg
1 - teaspoon rum extract
1 - teaspoon vanilla extract

Preheat oven to 350 degrees. Grease bottom of two 9x5 inch loaf pans or use mini loaf pans. Beat eggs, add sugar, eggnog, butter, rum and vanilla extract. 

Sift together the flour, baking powder, salt and nutmeg. Add the flour mixture to the batter and mix well.

Add the instant pudding and blend. Pour into greased pans and bake at 350 degrees 20-25 minutes for mini loaves and 40 - 50 minutes for regular loaf pans. 

Bread will be golden brown and a toothpick inserted comes out clean. Cool in pans 10 minutes. Remove and cool completely on a baking rack. When cool drizzle eggnog glaze on top.


Eggnog Glaze:
1 - cup powdered sugar
Enough eggnog to make a glaze to drizzle over bread

To make the glaze: Mix (1) cup powdered sugar with enough eggnog to make a pourable glaze. Drizzle over cooled loaves. Let glaze set before storing bread.

Recipe yields: approx 5 mini loafs or 2 regular loaves

mmmmm....I love eggnog, and I love tea breads to make at Christmas time. I'll have to try this.
And I think the sugared walnuts can be replaced by pecans. In fact I just bought some pecans to try also. They are my favorite nut.

I made this as cupcakes and it was great! I did use the pudding and the glaze. Terrific! We have Braum's stores here & their eggnog is the best I have ever had. It really made this recipe exceptional!

Yes you can omit the rum extract and go with all vanilla.

I had to make a few adjustments for high altitude. Hopefully this will save someone from experimenting like I had to. I only used 1 1/2 teaspoons of baking powder and added 2 Tablespoons of flour. I also increased the nutmeg a little, but that was personal preference. My friends and family loved getting this for Christmas!

Quick breads can be frozen for 2-3 months. I always bake extras to keep in the freezer for after the holidays.

Hi, I know this may sound like a dumb question, but I have not had any experience with egg nog. Is the egg nog you are using non alcoholic? It looks and sounds like such a great recipe and I would love to try it, but have only ever had non alcoholic, so I am not sure if it is what you are referring to. Can you please tell me if non alcoholic would work?
