Holiday Cranberry Salad ~ A Last Minute Recipe ~

I know everyone is busy preparing last minute details and dishes for their Christmas Dinner. I wanted to post this recipe earlier for my Holiday Cranberry Salad.

Since it's not assembled until the night before. I just could not make this any earlier. That's why I am making a last minute recipe post.

There is still time to make this wonderful salad for Christmas Dinner if you have all the ingredients on hand. It is really quite tasty and festive in color. Perfect if you need to take a dish over for a holiday dinner with family or friends. 

Holiday Cranberry Salad

1 - 12 package Fresh Cranberries
½ - cup pecan pieces
3 1/2 - cups Mini Marshmallows
1 – 8 oz can Crushed Pineapple (drained)
1 – cup Sugar
1 - pint fresh whipped cream, whipped

Chop cranberries in food processor or blender. 

Chop while frozen to prevent splattering. 

Mix together cranberries, sugar, pineapple, marshmallows and nuts. 

In a separate bowl whip whipping cream until stiff peaks form. 

Fold into cranberry mixture and chill overnight.

I have made this recipe forever only without the nuts. You are the only person I have ever met, besides my grandmother with this recipe. :)

This brought back memories of a similar salad we used to have. I have to track down the recipe. As I remember it, we used cream cheese and whipped cream and whole cranberry sauce and maybe crushed pineapple. I will have to do some scouting around. I would love to make it again. Cranberries have turned into a real treat.

I want to take this moment to tell you what a glorious site you have. This is the first time I have really looked at it and I found more than I could absorb. You have information, photos, a plethora of recipes and referrals to interesting places on the Net and more than I can include here.

I did not know you could eat cranberries raw. Are they bitter?

Hi acrejon, by themselves yes they are a bit bitter. This salad has sugar, and pineapple juice, whipped cream and more yummy stuff. It sweetens the cranberries up nicely.

OMG! Tina... my family and guests loved this salad. My nephews requested that I make this salad for Christmas and my daughter's boyfriend's brother asked me to make a salad and he'll pay me for it.

Wow I am completely stunned right now! I have never known anyone outside of our family to make this recipe, and we have been making it for over 50 years! The only change we make (as well) is no pecans. We have shared this tasty "salad" with friends and new family; it is now what we are known for and are required to bring over year after year, all season long. I hope everyone who tries this recipe enjoys! :)
