Harvest Cake Balls

All it takes is just one bite, a chocolaty coating outside and on the inside you will find a rich, moist, cake interior – the perfect amount of cake to frosting. This decadent treat is called a Cake Ball. I'm sure you've heard of them. If you have visited Bakerella’s site then you know exactly what they are.

For those who don't know what a cake ball is here's the low down. . Cake balls are made by combining crumbled baked cake with frosting, rolling the mixture into balls, and covering the balls with confectionery coating or almond bark umm ummm good. They are the perfect bite size little cake.

I guess you could call them Cake Truffles because that is what they taste like. All you have to do to start is pick your favorite cake flavor, favorite frosting and your choice of sprinkles or no sprinkles. Then you need to pick if you want them rolled in chocolate of white chocolate.

You can combine just about any flavor cake with any frosting, just experiment a bit and find that perfect balance. Cake Balls are perfect for parties, baby showers, holidays and even weddings. Bite size little cakes, it doesnt get much better than that.

I chose to make chocolate cake with chocolate frosting and dipped them in milk and white chocolate. I also made french vanilla cake, white frosting and dipped them in white chocolate. I thought they turned out pretty good.

Here are a few variations:
  • German chocolate cake with coconut- pecan icing and milk- chocolate coating.
  • Spice or carrot cake with cream-cheese frosting and vanilla coating.
  • Red Velvet Cake with vanilla cream cheese or vanilla frosting and vanilla almond bark coating
  • White Cake with vanilla frosting and vanilla coating tinted green or red with green or red streaks (Christmas) or green or red sprinkles.
  • Devil's food cake with fudge icing and white chocolate coating.
  • Yellow cake with butter cream frosting and orange-colored vanilla coating with green or black sprinkles. (Halloween).
  • White cake with white frosting mixed with orange and yellow sprinkles and chocolate coating. (Fall or Halloween) or Harvest Sprinkles .

These are the ingredients you will need: any flavor cake mix, you choice of frosting, white chocolate or milk choclate almond bark. I prefer the Plymouths Pantry almond bark sold at walmart. In my opinion it is much smoother than the CandiQuik.

Bake cake accorging to package directions and let cool a bit. This paticular day I made french vanilla and chocolate cake. When the cake is still warm cut into pieces.

and place pieces in a large bowl.

crumble with fork or your hands.

add the canned frosting and mix well, you might have to use your hands. Try and use the regular frosting instead of the whipped it makes the cake to wet and then it looses its cake appearnce and is to mushy.

form into walnut size balls and place a cookie sheet lined with waxed paper. You might have to rinse your hands and dry them about every 7 balls or it gets to sticky.

Freeze for 1-hour or overnight.

melt the almond bark in a double boiler if you dont have a double boiler you can use a pan and a glass bowl. Or use the defrost setting on your microwave I time mine at 2 minute intervals and take out and stir and defrost again till melted (about 4-5 minutes on defrost)

using toothpicks or a fork dip each ball into the melted chocolate or almond bark.

Coat with sprinkles (you need to be quick with the sprikles as the chocolate tends to set up fast on the frozen cake balls)

and place on a tray lined with waxed paper.

I also drizzled white almond bark on chocolate cake balls. You can use a pastry bag or fill a ziplock sandwich bag and cut off the end, then you can just throw it away after. Let the cake balls sit on waxed paper until they have set. These turned out so pretty, I like how the chocolate ones drizzled with white chocolate turned out.

Very Festive Ü

yummo good they taste like cake truffles, the chocolate ones are really rich. You can add them to mini muffin liners and place in a pretty tin for a great gift. These freeze very well. I just store them in a large ziplock bag and place in the freezer until i add them to my holiday trays.

Harvest Cake Balls

1 - (18.25 ounce) package cake mix any flavor

1 - (16 ounce) container prepared frosting (any flavor)
1 - block chocolate (24oz) flavored confectioners coating (prefer plymouths pantry)
(milk chocolate & vanilla almond bark)

Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.

Melt chocolate coating in a glass bowl in the microwave on the DEFROST selection or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.

Use a melon baller or small scoop to form balls of the chocolate cake mixture. Freeze the cake balls for one hour or overnight. Remove from freezer and dip the balls in chocolate using a toothpick or fork to hold them.

Place on waxed paper to set. Roll in sprinkles, nuts, coconut or whatever you like. You can even dip in chocolate and then drizzle while chocolate over that.

I love these cake balls, but i do have a question, how do you get yours to look so pretty?
i have tried melting the almond bark in the microwave and on the stove top but after I dip several, i start to get cake bits in the dip and it ends up getting icky and I have to start all over again..I have wasted some almond bark....are there any tips you can give me...
thanks

WoW! This pie is amazing. I have been searching forever for a good chocolate pie recipe and wasn't able to find one that was exactly what I was looking for. I made this pie last night for my in-laws and needless to say it was a big hit. My husband loved in and is already wondering when I will make the next one.

I love all of your recipes I have tried, just one suggestion. On the printable recipe you didn't mention freezing the cake and icing balls first and there was no way the filling would stay together not frozen.

Just added the part about freezing. TY for pointing that out. The balls should stay together though before freezing. If not then the cake balls are to dry so you would need to add a bit more frosting. I always seem to have the problem of them being to sticky.
