Pumpkin Patch Pancakes with Apple Cider Syrup

Pumpkin infused pancakes with an Apple Cider Syrup! These pancakes are the perfect Fall breakfast treat. 
Today I'm getting a jump on some Fall recipes. The kid's wanted pancakes for Saturday Morning Breakfast and I wanted something special so I made these Pumpkin Patch Pancakes with Apple Cider Syrup. 

We planned on staying inside today day because the weather is suppose to be really bad, so it's was the perfect day to test out a new recipe. I came across this pumpkin pancake recipe about a week ago and I couldn't wait to try it.   

I did adapt the recipe just a bit and added brown sugar and vanilla. My youngest son loves pumpkin bread so, I was hoping he would like these pancakes just as much. He's still at the age where he's a bit picky, but he's getting better.  

The kids served their pancakes with maple syrup  and my husband and I used the apple cider syrup. The combination of the pumpkin and apple cider was so delicious and everyone loved the pancakes. If you love pumpkin pancakes this recipe is a must try. It pretty simple and uses baking mix, but the pancakes taste like they were made from scratch. 




Pumpkin Patch Pancakes

Ingredients:
2 - cups biscuit baking mix (I prefer Jiffy or Pioneer)
1/2 -  cup canned pumpkin or fresh pumpkin puree
1/2 -  cup brown sugar
1 - teaspoon vanilla extract
3/4 - teaspoon pumpkin pie spice


Apple Cider Syrup
1 - cup granulated sugar
3 - tablespoons cornstarch
1 - teaspoon pumpkin pie spice
4 - cups apple cider or apple juice

Instructions:
In a sauce pan mix together, sugar, cornstarch, and pumpkin spice. 
Stir in apple juice or apple cider. Bring to a boil, remembering to stir occasionally. Boil until desired thickness. Remove from heat and serve over Pumpkin Patch Pancakes.

Tina it looks wonderful. My youngest daughter came home from a sleepover this morning and said the other mom made pancakes with homemade syrup. I am not sure to even know how to attempt that, she said it was so delicious. I am anxious to try this (tomorrow!) I am going to let you know how it went. Yours look very delicious.

If I can do plain pancake syrup I surel can try yours. Thanks for the

Hi Joan I just love it when you stop by. I wastnt sure about attempting the syrup, but I did it!!!! The kids prefered good old bottled syrup on theirs but me and my husband and neighbor loved the syrup. It was really easy to do. LMK how you like the recipe if you end up making it. This one is definitly a keeper.

Stephanie, didnt it just look to die for when you saw them. I couldnt wait to make the either after seeing them at Lauras site. I love the simplicity of the recipe. Dont forget the pumpkin.

Tina, it looks like you're ready for the autumn weather. I am too. We don't make breakfast during the week, but I do like a nice big breakfast on the weekend. And these are going to be on my list to make. Thank you my friend, great post, as always.

Lori, the teachers would love these pancakes. This is a very simple recipe.

Hi Laura, this recipe was wonderful. You need to try the addition of the Brown Sugar and the Vanilla it really makes the pumpkin flavor pop. My kids are already asking for more. I need to make some up and freeze them for before school breakfast, they wanted them this morning but i just dont have the time during the school week.

Teresa I am always jumping the gun on the holidays I have always been that way. We love a big breakfast on the weekends and sometimes breakfast for dinner thats a favorite in our house. I hope you stayed dry on Saturday from Ike. We got a lot of rain in Big "D".

Lunch Buckets, i thought the same thing just serve both maple syrup and the apple cider syrup. It is so yummo you have to make it you will be pleasantly surprised.

I just made these this morning - they were so good! The syrup makes a LOT ... does it keep well in the fridge?

inmomniac, I am not sure on storing the apple cider syrup in the fridge. I had noted in the pictured instructions that i only made a half recipe of the syrup because i thought it would be to much. The half recipe was perfect. You can try and store it in the fridge it use it within the week i assume. Maybe you can look online about homemade syrup storage.
