I just made some macaroni and cheese that my kids and my husband absolutely LOVED! This is exciting to me, because I have a hard time finding a recipe that pleases the whole family.
My kids love Kraft's Deluxe Mac & Cheese, but my husband prefers more of a homemade version. So, you can see my dilemma on trying to make everyone happy.
I've never had great luck making homemade macaroni and cheese. It's either too dry and clumpy or it calls for eggs as one of the ingredients. I don't like adding eggs to mac and cheese, because it turns out too curdled looking.
I prefer more of a creamy dreamy macaroni and cheese. Well, folks I think I have finally found the perfect recipe. I was thumbing through one of my Taste of Home magazines and came across this recipe for Creamy Skillet Macaroni & Cheese.
What jumped out at me most was the word "creamy" and that this recipe was egg free! Other than cooking the macaroni in a separate pot everything else is prepared in one skillet. You gotta love that?
The original recipe calls for half & half, but I think evaporated milk would be a great substitute. I compared the caloric information and they're about the same fat and calorie wise.
This recipe is too easy peasy not to try for yourself, so if you give it a whirl let me know what you think.
Start b cooking the macaroni according to the package directions. In a large nonstick skillet, melt butter over medium heat. Stir in flour until smooth.
Gradually add cream; bring to a boil. Cook and stir for 2 minutes or until thickened. The mixture is thick enough if it can coat the back of a spoon. Reduce heat to low and
stir in the cheese until melted. Drain macaroni; add to cheese mixture. Cook and stir for 3-4 minutes or until heated through. Remove from heat and serve.
It has egg in the recipe, but my family likes it pretty well. I'm just so tickled to have finally found a stove top creamy macaroni and cheese recipe.
Creamy Skillet Macaroni & Cheese
Ingredients:
2 - cups uncooked elbow macaroni
2 - tablespoons butter
2 - tablespoons all-purpose flour
1 1/2 - cups half-and-half cream or evaporated milk
3/4 - lb Velveeta cheese, cubed
Directions:
Cook macaroni according to the package directions. Meanwhile, in a
large nonstick skillet, melt butter over medium heat.
Stir in flour until smooth. Gradually add cream; bring to a boil.
Cook and stir for 2 minutes or until thickened. Reduce heat to low and stir
in the cheese until melted.
Drain macaroni; add to cheese mixture. Cook and stir for 3-4 minutes
or until heated through. Remove from heat and serve.

My hubby loves homemade mac and cheese. The recipes I've tried have always turned out clumpy too. Can't wait to try this one. It looks delicious.
I always make homemade mac n cheese ... so easy no recipe needed. Cook desired amount macaroni, drain, add cubed Velveeta, milk [to keep from getting dry] and little butter. Heat until cheese is melted. It is as easy as a boxed mix but much better. T'sa
How funny! I just made almost this exact recipe tonight. I used 4T butter to 4T flour and used 2C shredded sharp cheddar cheese. Everyone raved. Thanks for your great recipes and hard work.
I'm happy to see this recipe uses Velveeta...it really adds a smoothness and a great flavor to mac and cheese. I'll be trying this very soon!
My favorite and now for my kids too calls for real cheese and is beyond simple. Cook your macaroni, drain, add shredded colby-monteray/jack (aka Co-jack) and allow to melt. Done and delicious.
I do reccomend buttering the bowl if you aren't mixing in the pan.
I do one very similar but with 2% milk and Colby jack cheese. If you put it under the broiler for a few minutes just to get a little Browning on the cheese you get a baked taste..best of both world's!
