As we move closer to fall here in northeast Texas, the sweltering triple-digit temperatures are still hanging around. This summer has been particularly tough on us, and our garden. The heat has been so extreme that this is the first time we haven't been able to start a fall garden. It's a bit disheartening, but sometimes nature has its own plans. I do still have some okra, green beans and sweet potatoes growing in the garden, but that's it for the reminder of the year.
On the brighter side, our garden was good to us this year, allowing me to can and freeze a good amount of food for the upcoming fall and winter months. We have been stocking up on meat and fish when we catch it on sale, and my husband and son have filled our freezer with crappie from a great fishing season. It has been so wonderful having a well stocked freezer of fish again, it's something I've really missed.
This month's menu includes 30 dinner ideas that are perfect for the whole family, along with some delicious desserts. We've stocked up on chicken, so you'll find plenty of chicken recipes featured throughout the meal plan. With beef prices on the rise, I've been focusing on more affordable options like ground beef, ground turkey, chicken thighs and drumsticks, whole chickens, pork, and salmon. Hopefully you'll find something you like.
NOTES ABOUT THE MENU PLAN:
- The menu pictured above is just a preview for you to pin if you'd like. You can find the full printable PDF version --> HERE
- I have organized this menu plan into a list format. This method gives me the freedom to select what I want to cook each day, and I can conveniently mark off meals as I make them.
- All recipes have clickable links (on the PDF version) that are listed on Mommy's Kitchen or recipes that are available online.
- I typically add the main course and choose my vegetables and sides when I cook. Since the menu plan has limited space for listing everything for each meal, I included as much as I can.
- Any recipe marked with an asterisk (*) indicates a meal that has been carried over from the previous month that was not prepared.
