Today I have a quick and easy recipe to share that's also the perfect one dish meal. Smoked sausage is my youngest sons favorite, so I'm always on the look out for new recipes. This recipe for Oven Roasted Potatoes & Smoked Sausage was one that I had found on Pinterest a couple months back.
This recipe is super simple to make and perfect for those nights when you still want a home cooked meal, but it needs to be quick and easy. I also love that everything is roasted together in one pan. Serve with your favorite veggie and a garden salad to complete the meal. I was shocked when my youngest ate two servings and gave me a thumbs up. I'm so glad he's finally growing out of that picky eater stage.
For this version, I roast the potatoes and the butternut squash first along with the spice until tender. Then add the sliced sausage, peppers and onions so they don't over cook. I hope y'all enjoy the recipe as much as my family does.

Oven Roasted Potatoes, Peppers & Sausage
Sliced smoked sausage roasted together with potatoes, onions, peppers and spices.

Ingredients
- 1 (16 oz) package smoked sausage (I prefer skinless) or use chicken sausage
- 5 med-large potatoes, cut into 1 -2 inch cubes or
- 2 lbs red potatoes or sweet potatoes
- 1 small onion, cut into small pieces or chopped
- olive oil
- kosher or sea salt
- fresh ground pepper, to taste
- Tony Chachere's creole seasoning, to taste
- Montreal steak seasoning, to taste
- 1/2 cup shredded sharp cheddar cheese, optional
Instructions
- Preheat oven to 400 degrees. Line a large rimmed baking sheet with aluminum foil, and drizzle with a bit of olive oil and set aside.
- In a large bowl, add the sausage rounds, potatoes, and onions.
- Drizzle the mixture with a couple tablespoons of olive oil, and season to taste with kosher salt, pepper, and seasoning.
- Toss the mixture together until blended and pour out onto the baking sheet. Spread the mixture out as evenly as possible.
- Place the baking sheet into the oven and roast the mixture for about 45 minutes, turning every 15 minutes or until the potatoes are golden brown and tender. Turn off the oven.
- Remove from oven and scatter the shredded cheese over the mixture, put the baking sheet back into the oven for about 5 minutes until the cheese melts.
Notes:
If you love onions and peppers this grown up version is just as delicious and quite popular in our house. This recipe is the same as above, but I add cut up sweet potatoes, butternut squash, onions, bell peppers, 1-2 fresh sliced jalapeno pepper (without the seeds), spices and I omit the cheese. I usually roast the potatoes, sweet potatoes and butternut squash by themselves along with the spices until tender. Then add the sliced sausage, peppers and onions so they don't over cook.
