Rice Pilaf is a rice dish in which the raw rice is first simmered in an oil or butter, then cooked with water or broth, and sometimes meat, poultry, fish or shellfish. I've been making this recipe for so long that I can't even remember where I got it.
What I love most about this recipe is how simple and versatile it is. This recipe is also very forgiving on what veggies can be added. I like to toss in everything listed, onions, bell pepper, celery, carrots and mushrooms. Of course if you have someone that dislikes a few of those ingredients just leave them out.

This pilaf recipe is really easy to make, so I don't have too many step by step photos. Just saute' all the veggies and rice add the chicken broth and spices and cover. Cook on low for 20 minutes or until all the liquid is absorbed.
Fluff with a fork and enjoy.
