Instant Pot Milk & Honey Corn on the Cob

This sweet and buttery milk and honey corn on the cob is cooked quickly and easily in the Instant Pot. 🌽🍯
Nothing says summer like fresh, sweet corn on the cob. It's always so exciting when the first crop of corn is ready to harvest from our garden, because it means I can make our favorite corn recipe. Milk & Honey Corn on the Cob is made with fresh corn that is simmered in a creamy milk bath, seasoned with butter, creole seasoning and sweetened with a touch of honey. 

Using this method yields a juicy, slightly sweet corn on the cob with a bit of a kick. You can simmer the corn on the stove top or cook it in the Instant Pot which is my favorite method. Using the Instant pot is not only quick, but cooks the corn perfectly. The best part is that it's totally hands off! Just add all of the ingredients to the Instant Pot and that's it. The pressure cooker does all of the work. 

Homegrown corn thrives very well in a backyard garden if planted properly. Our garden isn't anything grand, but it's perfect for us. We live in North Texas and our growing season is longer than most places, so we definitely take advantage of the time we have to grow a variety of vegetables. 

Corn is one of our favorite vegetables to grow and we can usually get a summer and fall crop if we time it just right. When you have a garden you eat seasonably, so we pretty much enjoy corn and green beans throughout the summer months and preserve the remainder by canning or freezing.  

After harvesting the corn, I will remove the husks, blanch and remove half the kernels and package them up in vacuum seal bags. I do the same with the remainder of the corn but leave them whole. Freezing corn is an easy way to preserve corn to enjoy year round. There is nothing better than having access to fresh summer corn in the dead of winter. 

To make this recipe start by shucking the corn and rinsing well under cold water. Cut each ear in half and set aside. 

Add the inner liner to the instant pot and add the water and milk. Turn the Saute' feature on low so the liquid starts to warm up. Add the butter, salt or Cajun seasoning and honey. Whisk until the butter and honey is melted and blended.  

Turn off the Saute' feature and and add the corn. Cover the pot and close the lid, set the steam release knob to the "sealing" position. Press the pressure cook/manual button and + select 4 minutes on high pressure. The pot will take some time to come to pressure (about 10 - 15 minutes) with the amount of liquid added. 

When the cook cycle has ended do a natural release for 10 minutes, then turn the steam release knob to "venting" and release the remaining pressure. When the pin on the lid has dropped, open the instant pot and remove the corn using tongs. 

Add additional butter and seasoning if desired before serving. Milk & Honey Corn on the Cob is the ultimate summer side dish, I hope your family loves it as much as mine. If there is any any corn or broth left over, I remove the corn from the cob and save both to make Chicken Corn Chowder.
