Cinnamon Roll French Toast Bake

Refrigerated cinnamon rolls are baked in a egg, cream and cinnamon mixture to make this simple, ooey-gooey, shortcut French toast bake.

One of my favorite things about the Christmas holiday is waking up to a yummy breakfast on Christmas morning. I'm always on the hunt for simple and tasty recipes and breakfast casseroles are always a wonderful choice. Whether you prepare this dish the night before or on Christmas morning this French toast bake is sure to please everyone. Let's get right to the recipe! 

Start by cutting each cinnamon roll into quarters and add to a large mixing bowl. Add the melted butter and toss to combine. Pour the mixture into the baking pan. In a separate bowl combine the eggs, heavy cream or half & half, maple syrup, vanilla, and cinnamon. 

Whisk until the ingredients are well combined and pour over the cinnamon roll pieces. Add pecans if using. Bake for 20-25 minutes until the cinnamon rolls are cooked through, golden brown and the egg mixture is absorbed.

Remove from oven and cool for 10 minutes, Warm the icing from the cinnamon rolls in the microwave and drizzle over the french toast bake. Drizzle with additional maple syrup if desired. Serve immediately.

Ingredients

  • 2 - 12-ounce tubes refrigerated cinnamon rolls, cut into quarters
  • 1/4 - cup melted butter
  • 3 - eggs
  • 1/2 - cup heavy cream
  • 3 - tablespoons maple syrup
  • 2 - teaspoons vanilla
  • 1 - teaspoon cinnamon
  • 1/2 - cup chopped pecans (optional)
  • reserved icing packets

Instructions

  1. Preheat oven to 375 degrees.
  2. Lightly spray a 13 x 9 inch baking pan with non stick cooking spray.
  3. Cut each cinnamon roll into quarters and add to a large mixing bowl. Add the melted butter and toss to combine.
  4. Pour the mixture into the baking pan.
  5. In a separate bowl combine the eggs, heavy cream or half & half, maple syrup, vanilla, and cinnamon.
  6. Whisk until the ingredients are well combined and pour over the cinnamon roll pieces. Add pecans if using.
  7. Bake for 20-25 minutes until the cinnamon rolls are cooked through, golden brown and the egg mixture is absorbed.
  8. Remove from oven and cool for 10 minutes, Warm the icing from the cinnamon rolls in the microwave and drizzle over the french toast bake. Drizzle with additional maple syrup if desired.
  9. Serve immediately.

Notes:

To make this an overnight dish: 

Prep the casserole the night before and cover with plastic wrap unbaked. Refrigerate overnight. In the morning, preheat oven to 375 degrees and bake as directed and add glaze.
