Chocolate Chip Cookie Cheesecake Bars

Shortcut, chewy cake mix cookie bars topped with a cheesecake filling and milk chocolate chips. These cookie bars are perfect for potlucks, cookouts or parties. 
These Chocolate Chip Cookie Cheesecake Bars are made with 6 ingredients and bake up in just 30 minutes! The first time I made these cookie bars, I couldn't wait to share this recipe with you. I love sharing quick and easy recipes that turn out so delicious. 

I found this recipe on one of my favorite you tube channels, Lynette Yoder, All things Home and Family. You should check out her channel because she has some wonderful videos with some pretty tasty Mennonite recipes. I will link her channel at the end of this post, I have been following along or several months and she never disappoints. 


When it comes to cake mix recipes you either love them or hate them. I for one love using a cake mix especially to create different recipes other than a cake. You would be surprised at what all you can bake up with an ordinary store bought cake mix. 


I think what I love most is the simplicity of these cheesecake cookie bars. They look and taste from scratch,  but they don't take all hours in the day to make. You can use milk chocolate or semi sweet chocolate chips. 

I have made these cookie bars twice and my family really likes them, so I can't wait to make another batch. They're perfect for potlucks, cookouts, parties or to use in a cookie exchange. I will definitely be baking these up to add to my holiday cookie trays this year. 


To start, preheat the oven to 325 degrees. Mix the dry cake mix, egg and oil together until crumbly. Reserve 3/4 cup of the cake mixture and set aside. 

Press the remainder in into a 13 x 9 inch baking pan that's been sprayed with baking spray. 

In a medium size bowl, beat together the softened cream cheese, egg and sugar.


Pour the cheesecake mixture over the bottom crust. Sprinkle the remaining cake mix crumbs and chocolate chips over the top and bake for 20 - 25 minutes. Do not over bake.

Let cool in pan.

Cut into squares before serving. These cookie bars are nice and rich tasting, so you only need one.

Ingredients

Cookie crust
  • 1  15.25 oz yellow cake mix
  • 1 egg
  • 1/3 cup vegetable or canola oil
Cheesecake Filling
  • 8 ounces cream cheese, softened
  • 1 egg 
  • 1/3  cup sugar (I use raw sugar)
  • 1 1/2  cups milk chocolate or semi -sweet chocolate chips

Instructions

  1. Preheat oven to 325 degrees. 
  2. Mix the dry cake mix, egg and oil together until crumbly. Reserve 3/4 cup of the cake mixture and set aside. 
  3. Press the remainder in into a 13 x 9 inch baking pan that's been sprayed with baking spray.
  4. In a medium size bowl, beat together the softened cream cheese, egg and sugar.
  5. Pour the cheesecake mixture over the bottom crust.
  6. Sprinkle the remaining cake mix crumbs and chocolate chips over the top and bake for 20 - 25 minutes.
  7. Do not over bake. Store any leftovers in the refrigerator.
