We call this "Corn Pudding" and I've never seen it with cheese on top - we love ours plain! :)

Love this recipe!!!!...we also do a sweet version that tastes like the "sweet corn tomalito" that you get in the big chain Mexican restaurants. Leave out the cheese totally and add 1/3-ish c. sugar to the batter... that is. a quick and dirty fakeout when you dont have time to make the real one that takes 2+ hours to bake.

I love corn casseroles. Yours is a lot like the one I make, minus the egg and cheese. I will have to try yours next time I make corn casserole! Congratulations on your trip to Napa! I read your post about it and enjoyed all the pictures. What an honor and what fun!!

Hi Colleen, I love potlucks. My husband says i will try anything. LOL he wont, but I dont him you just have to be open to different kinds of foods. He is a meat and potatos guy. Colleen I found a bowl for my salt dough bowl fillers. I have a photo so i will have to show you.

On the weeknight red beans and rice - I did not saute the rice before cooking. Just skipped this step and made my rice in the rice cooker. I began following the recipe at step #6. And, I used Hillshire Farms beef smoked sausage rather than turkey sausage. Just our preference.
