You don't have to dice them, just slicing them is enough. They are plenty soft after 8 hours in the crock.

I adore applesauce, especially homemade (because I can adjust the flavors however I want depending on my mood). People are always so surprised to hear that I make my own applesauce. They think it must be very difficult. Nothing could be further from the truth, but they don't believe me. Apples+Crockpot=Applesauce, easy! I mash it up with a fork (a handheld mixer sounds like it would make smoother applesauce, for sure). I even have a friend who leaves on the skins, she just cores the apples and runs the applesauce through the blender after it cooks.

Looks great! The contest is a local one. People had to go online and vote for my recipe and they took the top 10 for a cook off. It's Tuesday night at 6:30 and the grand prize is a $1000 grocery card to a local grocery store! Keep your fingers crossed for me.
