First the recipe state to rough cut and cook and then discard the veggies (minus the carrots) then later it says to finely chop the veggies and cook them with the noodles. Do you use half the amount in the recipe to make the stock and the other half to cook with the soup? Just wondering. Love your site, I am using many of the recipes for the cooking class I am teaching a group of teenagers.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-8390396285139687239.post-18621650224955563742011-03-12T10:50:11.511-06:002011-03-12T10:50:11.511-06:00Since I'm a lifetime Weight Watcher still have...Since I'm a lifetime Weight Watcher still have to watch those points. I used cut up chicken breast, left out the carrots (my daughter is allergic to them). Instead of evaporated milk I used 2 cups of skim milk, also used frozen homemade noodles. This soup looks wonderful! I love the idea of using evaporated milk! I'll have to try that next time. I make a similar soup but I use the crockpot and I don't use boxed broth. The carcass, veggies, and spices I add make a good enough broth on their own. Then, if I have left-over broth I pour it into ice cube trays and freeze it for future recipes. Just a thought. :)
Thanks for your site. Oh and next time just take a meat cleaver to that bad boy and crack it open!

That was a really sweet note you got from Erin.
