Piloncillo Bread & a Spotlight Blog

Today I am doing another Spotlight Blog.

From time to time i will be featuring different blogs I love, and shinning the spotlight on their Blog. Here's the deal you will not know you are being spotlighted so it's kind of a surprise. I browse different blogs all the time and pick out recipes that look so yummo to make. Then when i make a certain recipe from someones blog I will feature their site and show everyone the recipe or recipes I made. I will email the recipient of the Blog Spotlight and let them know they are being featured. I think its a nice way of saying thanks for a great recipe. The last Blog Spotlight i did was over on Southern Plate. So here is a new Blog Spotlight....

Congrats Teresa at Mexican-American Border Cooking your blog has been thrown in the spotlight!!!!!!!!!!!!!!!!

You need to check out Mexican American Border Cooking Teresa's has some great dishes I know you will like. Dishes like her Homemade Brisket, so yummy. She has a recipe for a pretty Strawberry Tequila Rose Cake not only is it beautiful but looks so Delicious. I love Teresa's idea for Picnic in a Box what a fun idea. I just know you are going to love her site as much as i do, so go check it out. You wont be disappointed trust me. Well in true fashion here goes the recipe for Teresa's Piloncillo Bread I had so much fun making it thanks Teresa for a great recipe.




I used the cone shaped Piloncillo.




These are the ingredients you will need. The vanilla extract was not in the recipe so omit that part. When i bake cakes and breads I automatically pull out vanilla extract so it was just a habit. Although i don't think it would of hurt the recipe to add just a bit.




Add butter and brown sugar to a large bowl.



Cream until light and fluffy




Add eggs, one at a time until well combined.





Sift flour, baking powder, and salt. Alternate adding flour mixture




and buttermilk to butter/sugar/eggs mixture.




Combine well. Look how light and fluffy the batter is.




Fold in crushed piloncillo pieces.




Prepare 2 (8 x 4 inch) loaf pans by greasing and flouring Pour into two prepared pans. Bake for about an hour.





Cool 10 minutes in pans





then turn out onto rack to cool completely


When Cool Drizzle the top of the bread with a glaze made with powdered sugar, milk and vanilla extract.



The bread turned out so pretty and golden brown the bread has a slightly sweet molasses flavor. It really is very good.


Brown Sugar Pound Cake/Piloncillo Bread
(Inspired by Martha Stewart recipes)

2 sticks unsalted butter, room temp
3 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 1/2 cups packed light brown sugar
5 large eggs
3/4 cup buttermilk
1 cone piloncillo, chopped


Preheat oven to 325 degrees
Prepare 2 (8 x 4 inch) loaf pans by greasing and flouring.

Alternate adding flour mixture and buttermilk to butter/sugar/eggs mixture. Combine well. Fold in piloncillo pieces. Pour into two prepared pans. Bake for about an hour. Cool 10 minutes then turn out onto rack to cool completely.
