Today I am doing another Spotlight Blog.
From time to time i will be featuring different blogs I love, and shinning the spotlight on their Blog. Here's the deal you will not know you are being spotlighted so it's kind of a surprise. I browse different blogs all the time and pick out recipes that look so yummo to make. Then when i make a certain recipe from someones blog I will feature their site and show everyone the recipe or recipes I made. I will email the recipient of the Blog Spotlight and let them know they are being featured. I think its a nice way of saying thanks for a great recipe. The last Blog Spotlight i did was over on Southern Plate. So here is a new Blog Spotlight....

These are the ingredients you will need. The vanilla extract was not in the recipe so omit that part. When i bake cakes and breads I automatically pull out vanilla extract so it was just a habit. Although i don't think it would of hurt the recipe to add just a bit.
Prepare 2 (8 x 4 inch) loaf pans by greasing and flouring Pour into two prepared pans. Bake for about an hour.
When Cool Drizzle the top of the bread with a glaze made with powdered sugar, milk and vanilla extract.
The bread turned out so pretty and golden brown the bread has a slightly sweet molasses flavor. It really is very good.

2 sticks unsalted butter, room temp
3 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 1/2 cups packed light brown sugar
5 large eggs
3/4 cup buttermilk
1 cone piloncillo, chopped
Prepare 2 (8 x 4 inch) loaf pans by greasing and flouring.
Cream butter and sugar until light and fluffy. Add eggs, one at a time until well combined. Sift flour, baking powder, and salt. Alternate adding flour mixture and buttermilk to butter/sugar/eggs mixture. Combine well. Fold in piloncillo pieces. Pour into two prepared pans. Bake for about an hour. Cool 10 minutes then turn out onto rack to cool completely.
