Chili Cornbread Casserole

Today I'm featuring a deliciously quick and easy recipe. I got this recipe from a really good friend that I met years back. Almost 5 years ago to be exact. Her name is Cody, I met Cody on a coupon trading board and we became trading buddies and instant friends right off the top. 

I think we hit if off so well because we have the same interests we are both stay at home mommy's, coupon clippers, money savers, bargain hunters and we both share the love of cooking.

Oh i forgot she is a menu planner as well I guess i could say we are two peas in a pod. The only sad part of the whole thing is that we live so far apart, so we rely on online communication through emails and Myspace.


We love to exchange recipes and we are always trying each others dishes it really doesn't get much better than that. The first time I made the Chili Cornbread Casserole my family devoured it!!! so i thought to myself this recipe is definitely a keeper.
 

I always have it on my menu rotation not only because its easy to throw together but its just so darn good. So everyone here is the recipe for Cody;'s Chili Cornbread Casserole. I know when you try this recipe that it will become a favorite in your house as well. Thanks Cody.

These are the ingredients you will need. I forgot to add the onion in the picture, sorry my bad. Remember the full recipe is always included at the end of the post.


Brown hamburger with onion and drain grease.

Add Tomatoes,

add chili beans

then Chili Seasonings mix or seasonings.

Simmer for 15 minutes.
prepare corn muffin mix according to package directions.
(1/3 cup milk and 1 egg for each package)


this was not in the original recipe but i love this part. I add 1/2 cup extra shredded cheese to the corn muffin batter. But its your preference.


grease a 9x13 inch baking pan


when the mixture is done simmering pour into your greased baking dish.


sprinkle the shredded cheddar cheese on top


Pour prepared corn muffin mix on top of the chili and cheese cover completely

gently smooth the batter evenly over the mixture. Bake at 400 degrees for 20-25 minutes or until golden brown.


it turned out wonderful but then it does every time. dig in......



Cody's Chili Corn Bread Casserole

1 lb. hamburger, browned, (drained)
½ cup chopped onion
1 can diced tomatoes (do not drain)
2 (15 oz) cans Bush's chili beans
½ - tsp. onion powder
3 - tsp. chili powder
½ - tsp. garlic salt
salt & pepper
1 cup shredded cheddar cheese
1/2 cup additional cheddar cheese for batter (optional)
2 - packages Jiffy Corn Muffin

Mix Brown hamburger with onion and drain. Add Tomatoes, chili beans and seasonings. Simmer for 15 minutes. 

Put into greased 9x13 pan and sprinkle cheddar cheese on top. Mix corn bread mix according to box directions. (I add some cheese to the corn muffin mix before pouring it on top)

 Pour corn muffin mix on top of the chili and cheese cover completely. Bake at 400 degrees for 25 minutes or until golden brown.

Cook's Note:
I use a packet of chili seasoning mix and omit all the spices. Add about a 1/4 cup of additional water to the meat mixture.

I've done chili casserole several times! It's such an easy dish, and it's cool because you have your classic chili and cornbread, but all prepared in the same dish! Looks so yummy.

This looks so good! You know what is funny? We both has chili bakes in one form or another for dinner on the same day! I am posting mine later in the week, I think.

I tried this recipe and it is so good! I was hesitant about the Jiffy mix b/c it is usually too sweet for me, but it goes perfect with the chili!! I made this dish twice in one week. One for my family and one for my sister's. Everyone loved it! It is a favorite in my family now. Thank you for posting it!

I needed to make a quick dinner that was filling and comforting and this hit the spot. I'm also a stay at home mom and dinner time hits after football practice. So I needed something fast and filling and my kids absolutely loved it. I just made a small adjustment, I used turkey meat instead of hamburger. Thanks for the recipe! I was going to make tacos tonight, but I used your idea to make a taco pie! The
base was taco meat (taco bell seasoning, sauted ground beef and onions) Then I topped it with a bag of Lipton Spanish Rice (cooked) Then I topped it with cornbread from as easy recipe on the cornmeal box. So great! My husband loved it with salsa on the side.

I have made a version of this virtually my entire life, we call it Corn Pone Pie.. no clue where the name came from.. but.. it is really good if you add hominy or corn to the mix, and mexican cornbread instead of Jiffy. Really good. Love this recipe!

Hi Tina,

Cody's Chili Cornbread Casserole sure looks good. I think I'd prefer to cut the recipe in half tho and wondered what you thought? Seems I could just halve all the ingredients and make in a 8 x 8 square pan but how much cooking time do you think?

Was good but it took much longer than 20 minutes to bake. Took about 45 minutes as the cornbread was still very doughy after only 20 min. Great recipe though!

Made this for my husband and he "Loved" it. I did also, so easy to make and the cornbread is ready when chili is, no separate pans to make it. Try it you'll love it.

Reading this made me think "Why not put the cornbread on top and bake it up?!" This is going to be sooo good, I'm making it for dinner right now. Can't wait to serve this up, thanks for the inspiration! Plus it's so easy
